Kale Slaw

Kale has a thick stalk and curly green leaves. This is prepared with raw Kale, which guarantees the most nutrients!

Ingredients

  • 3 Tbsp . lemon juice
  • 2 Tbsp . mayonnaise
  • 2 Tbsp olive oil
  • 1 Tbsp . Dijon mustard
  • 1/8 tsp each salt & pepper

Instructions

  1. Whisk ingredients together in a large bowl
  2. Remove ribs & tough stems from curly Kale; thinly slice leaves
  3. Add Kale to bowl with dressing, along with 1 small apple chopped & ½ cup toasted walnuts chopped. Toss to combine & voila!
